If you are like me, you are dying to go camping right about now. And you know what camping means....tin foil dinners! Well here is a super healthy recipe that tastes just as good in a campfire in your own oven...ok almost but its pretty close :)
1. Get out any vegetables you want to include in your tin foil meal. I just basically brought out everything from my fridge: red potatoes, green onions, carrots, broccoli, water chestnuts (for my husband, I'm not a huge fan), asparagus, and mushrooms.
2. Dice up however much you think you need for your family.
3. I soaked my mushrooms in Worcestershire sauce to give it some flavor.
4. Next, prepare your meals. My husband is a red meat eater so here is what I did with his steak.
As for mine, I used ground chicken.
and squeezed lime on it...
and then assembled it by putting the onions right by the meat first and then everything else on top.
5. Wrap them really well so that the juices don't leak out and pop them in the oven at 450 degrees for 30-45 minutes. I took out the steak one out at 35 minutes and kept the chicken one in for 45 minutes because I always worry about cooking my chicken all the way and my husband wanted his meat a little pink on the inside.
6. Then enjoy :) Can't wait to go camping in a few months.
If you want your veggies to be soft then put the carrots down first and then your broccoli and then the rest.
