Get your ranch ready because I have a salad for you! We all know that there are a ton of different salads out there but this one includes something a little bit special.
For my BBQ Chicken Salad I include: chicken covered in yummy BBQ sauce, black beans, avacado, red pepper, glazed corn, and crushed chips.
1. Boil your chicken in water until completely done. When it is done remove the chicken and let cool.
2. While your chicken is cooking we are going to prepare the secret ingredient that sends this salad to the next level. We are going to glaze some baby corn.
- Cut your baby corn into small pieces. Each piece cut into thirds.
- Set in pan and start getting them hot.
- When it looks like they are starting to cook add a LITTLE bit of butter.
- Heat it up a little bit longer and then drain the juices from the pan.
- Next, add a sprinkle of brown sugar all around your corn and let it sit on top for a while.
- When it has been cooking for a while and your pan is really hot then move the corn around, sprinkling a little bit more of brown sugar.
- After about 15 minutes from start to finish your corn should be done!
You have now glazed your baby corn and they taste like little pieces of pineapple...wierd I know but sooooo good!
3. Dice up your veggies: salad, red pepper, and avocado.
4. Drain and rinse your black beans.
5. Crush your chips by placing a few in a bowl and using the bottom of a cup to grind them up really finely.
6. After you have gotten everything ready you can finish your chicken. Shred up your chicken into tiny pieces and then give a generous coating of BBQ sauce. After you have blended the chicken and sauce, microwave the chicken to bring it back to warm.
I try to serve the corn and chicken warm but if room temperature is fine with you it's fine with me!
7. Lastly, top everything on top of your salad and cover with your favorite ranch dressing sauce :)

Red Pepper (or any other color of pepper)
